I have tried several ways of preserving hen of the woods. Freezing raw and dehydrating didn't give me the results I wanted. Last fall I cleaned, cut up, breaded and threw in the fryer til they were half done, then spread them out on cardboard to cool and suck some grease off. Then I put in gallon zip loc bags and put in freezer. Once or twice a week I get a handful out, throw on a cookie sheet and put in oven. They sure are good!!
